Walnut and Sausage Stuffed Acorn Squash

 

Ingredients -

4 large Acorn Squash
Butter
Coarse Salt
Fresh Ground Black Pepper
1 pound cooked Pork or Italian Sausage
2 cups Diced White Onion, sautéed
1/3 cup chopped Walnuts
1/4 cup melted Butter

 
Preparation:

1. Cut the squash in half lengthwise and remove the seeds and pulp.

2. Spray a shallow baking dish with nonstick cooking spray.

3. Place the acorn squash cut side down in the prepared dish.

4. Bake for 30 minutes in a 350 degree oven.

5. Turn the squash over and sprinkle with salt and pepper.

6. Fill the squash cavities with equal amounts of sausage and onion and then top with the chopped walnuts.

7. Drizzle the butter over the top.

8. Cook the squash for an additional 20 minutes.

9. Serve immediately.

Walnuts

Walnuts are available in most supermarkets in unshelled and shelled varieties. One ounce of walnuts called for in recipes equals 7 shelled walnuts.

Roasting Winter Squash

Roasting winter squash in the oven is a preferred method of cooking. Steaming and boiling the squash introduces water into the squash. Roasting brings out more flavor as the squash softens, water level decreases, and the natural sugars in the squash caramelize.
