Stuffed Acorn Squash

 

Ingredients -

2 Acorn Squash cut in half and seeds removed
1 pound Italian Sausage, casing removed
1 medium Yellow or White Onion, chopped
2 Celery Stalks, chopped
1/2 cup Sour Cream
1/4 cup Parmesan Cheese

 
Preparation:

1. Place the squash in a microwave safe dish, cut side down, with a bit of water.

2. Cover with plastic wrap and cook until the squash is tender, which takes about 10 to 15 minutes.

3. Sauté the sausage, onion and celery until the sausage is cooked through and the vegetables are tender.

4. Drain the excess fat from the pan.

5. Remove the pan from the heat and add the sour cream and parmesan cheese.

6. Transfer the squash to a 13 x 9 inch baking dish.

7. Salt the insides of the squash then stuff the cavity with the sausage filling.

8. Sprinkle the top with additional parmesan cheese.

9. Bake uncovered at 350 degrees for 30 minutes.

Winter squash can be very difficult to cut open with a knife. It is advisable to use a very sharp, very large knife and proceed with caution.

Lactic acid bacteria are introduced to cream and allowed to ferment, a process that sours and thickens the cream. Sour cream has a smooth texture and a tangy taste.
