Spiced Baked Acorn Squash

 

Ingredients -

6 whole Acorn Squash
3/4 teaspoon Cinnamon
3/4 teaspoon Ginger
3/4 teaspoon Mace
6 tablespoons Butter, melted
1 tablespoon Cider Vinegar
6 tablespoons Maple Syrup

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Cut the acorn squash in half and scoop out the seeds and membrane with a spoon.

3. Cut a thin slice off the bottom of the squash so that it rests flat.

4. Transfer the squash to a shallow baking dish.

5. In a small bowl, combine all the spices, mix well and sprinkle over the squash.

6. In another small bowl, mix together the melted butter and vinegar and drizzle over the squash.

7. Add 1/2 tablespoon of maple syrup to each squash cavity.

8. Cover the dish with foil and bake for 1 and 3/4 hours.

9. Remove the foil and baste.

10. Return to oven for 10 minutes.

11. Serve.
