Orange Baked Acorn Squash

 

Ingredients -

2 Acorn Squash
2 teaspoons Butter
1 tablespoon Low-Sugar or Sugar-Free Orange Marmalade
2/3 cup Orange Juice
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste
Ground Cinnamon, to taste (optional)

 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. Cut the squash in half lengthwise.

3. Scoop out the seeds with a spoon and discard.

4. Wrap each half in foil and place on a baking tray cut side down.

5. Bake for 30 minutes.

6. Take the squash out of the oven and remove the foil, carefully.

7. Place 1/2 teaspoon of butter in the squash cavity.

8. In a small bowl, combine the marmalade and orange juice and whisk well to blend.

9. Pour the mixture on top of the butter and sprinkle with salt, pepper and cinnamon.

10. Bake for another 25 to 30 minutes, or until the squash is fork tender.

11. Cut into quarters and serve immediately.

Winter Squash

Winter squash varieties contain high levels of vitamin A and vitamin C, as well as other vitamins and nutrients. The hard exterior of the winter squash allows some varieties of the vegetable to be stored up to 6 months. Although available year-round, most winter squash are harvested in late fall and made available for the holidays.

Orange juice is available in several varieties in supermarkets and can be squeezed from fresh oranges. There is no difference as far as the cooking is concerned.
