Maple Glazed Squash with Curry

Squash is roasted in the oven until tender, removed from the oven and coated in mixture of maple syrup, brown sugar, apple cider vinegar, ground cinnamon, coarse salt and curry powder. Squash is returned ot the oven to continue baking.

Ingredients -
2 Acorn Squash
2 tablespoons Maple Syrup
2 tablespoons Brown Sugar
2 teaspoons Apple Cider Vinegar
1/4 teaspoon Ground Cinnamon
Coarse Salt
1/2 teaspoon Curry Powder
 
Preparation:

1. Preheat the oven to 375 degrees F.

2. Pierce squash with fork in several places.

3. Microwave squash for 2 minutes. Allow to cool slightly.

4. Remove the stem. Cut squash in half lengthwise and remove seeds with a spoon.

5. Place squash halves in baking dish cut side up. Add 1-inch of water.

6. Cover dish with foil. Bake at 375 degrees F., for 30 minutes.

7. Add maple syrup, brown sugar, apple cider vinegar, ground cinnamon, coarse salt and curry powder to small bowl. Stir to combine.

8. Remove squash from oven. Brush with ample syrup mixture.

9. Bake additional 15 minutes, uncovered.

Remove the Skin, Seeds, and Fibers

The skin of the acorn squash can be removed using a vegetable peeler, although the ridges can sometimes make the task a bit of a challenge. The seeds and fibers in the center of the squash are easily removed with a spoon.

Maple Syrup

Maple syrup is produced from the sap of the black maple and sugar maple trees. The thin syrup has a distinctive flavor. Maple syrups are graded for quality. As a little syrup goes a long way, it is worth the price and effort to find a high quality syrup.
