Baked Acorn Squash with Orange

Squash is boiled and served with mixture of orange juice, orange zest and melted butter.
Ingredients -
2 cups Acorn Squash (cubed)
2 teaspoons Salted Butter
1 teaspoon Orange Rind
1/4 cup Orange Juice
1-1/2 teaspoons Sugar
 
Preparation:

1. In a small amount of rapidly boiling, cook the squash until crisp-tender.

2. Drain the water and set aside.

3. In a medium saucepan, melt the butter and add the orange rind, orange juice and sugar.

4. Cover and simmer until the sugar has dissolved completely.

5. Add the squash and re-cook until tender.

6. Serve.

Winter squash varieties include butternut, buttercup, delicata, hubbard, golden nugget, spaghetti, and turban.  You should not try to interchange the different varieties for one another as they vary in texture and flavor a little too much.

Preparing Acorn Squash

Unlike some winter squash varieties that are very difficult to cut in half, the acorn squash cuts in half fairly easily. The skin comes off with a vegetable peeler if desired. Acorn squash can be cooked in the microwave oven, sautéed, roasted in the oven, even grilled. The longer you cook the squash, the more water is removed, the more natural sugars come out, and the flavor is enhanced. This is especially true when roasting the squash in the oven.
