Baked Acorn Squash with Brown Sugar and Maple

 

Ingredients -

1 Acorn Squash
1 tablespoon Butter
2 tablespoons Brown Sugar
2 teaspoons Maple Syrup
Coarse Salt

 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. Cut the acorn squash in half, lengthwise and remove the seeds with a spoon, discarding.

3. Score the cavity of the squash with a sharp knife.

4. Arrange the squash in a baking pan, cut side up with 1/4-inch of water in the bottom of the pan.

5. Melt 1/2 tablespoon of butter in the cavity and sprinkle with salt.

6. Add 1 tablespoon of brown sugar and a teaspoon of maple syrup.

7. Bake until the squash is soft and the tops are brown, which takes about 1 hour and 15 minutes.

8. Remove the squash from the oven and allow to cool slightly.

9. Drizzle with the extra buttery sugar.

Some winter squash can be found year-round thanks to storage facilities. Most varieties can be found from August through March, with the late fall months of October and November being peak season. This fits in well with the holiday season and why winter squash are so popular for use during Thanksgiving and Christmas.
