Acorn Squash Stuffed Chicken Breasts

Chicken breasts stuffed with mixture of sautéed squash, celery, onion and green bell pepper mixed with cheddar cheese. Chicken is browned in skillet before being finished in the oven.

Ingredients -
1 tablespoon Butter
1/2 cup Acorn Squash, finely diced
1 Green Bell Pepper, diced
1 small White Onion, finely diced
1 Stalk Celery, chopped
Sea Salt, to taste
Fresh Ground Black Pepper, to taste
4 Boneless, Skinless Chicken Breasts
2 ounces Cheddar Cheese, shredded
2 cups All-Purpose Flour, for coating
 
Preparation:

1. Preheat the oven to 350 degrees.

2. Take a 9 x 13-inch baking dish and grease lightly.

3. Melt the butter in a medium skillet.

4. Add the squash, celery, onion and green bell pepper.

5. Sauté until just slightly tender.

6. Season to taste with the salt and fresh ground pepper.

7. Remove the squash from the heat.

8. Add the cheese and mix together.

9. Slice the chicken breasts on the side about 3/4 of the way through.

10. Stuff the mixture evenly into each breast until full.

11. Dredge each breast in flour to coat completely, and brown coated chicken in skillet.

12. Place the browned chicken breasts in the prepared baking dish.

13. Cover and bake in the preheated oven for about 30 minutes or until chicken is cooked through and juices run clear.
